Almost all professional chefs and most consistent home cookers prefer gas to electric in like everything I've read for years. It supplies much better control over the temperature and quickness when either heating up or cooling down. Apparently it also functions better with a lot of pans, provides better grilling and searing as well, and gas is cheaper than electric in a lot of states.
This is why whenever you see a higher end home with newer appliances they tend
to have gas stove-tops.
The only time I've seen people say that they consistently like induction more is when you're talking to people that live on boats and shit. This way they don't have to worry about propane supply and it's a bit safer to use out in seas.
