Well, I've been reading about baking, which i guess i should have done first, and this is what I've narrowed it down too.
1) I didnt use room temperature ingredients.
2) I measured the flour by scooping it with the measuring cup, which is apparently a no-no but bakers are too cool to wright recipes by weight, so you just have to guess the density of the ingredients.
3) Apparently there is a good reason you mix different ingredients in different bowls at different times instead of just mixing them all in one bowl at the same time. I may have over worked the batter by doing so.
So, i will try again, armed with knowledge! Maybe. At some point.
For now i just made corn muffins because those are easy af haha.
